DESCRIPTION OF THE LOAVES PRODUCTION LINE EQUIPMENT
Fermentation of the dough can be carried out in different chambers of final proofing, equipped with carriers with different coatings or wooden or plastic baskets, or simply on the conveyor belt of the chamber of tunnel type.
The most important baking process is carried out on tunnel ovens, which are divided into:
• cyclo-thermal tunnel ovens;
• thermal oil multi-tier ovens;
• tunnel thermal oil ovens;
• electric tunnel ovens.
Ovens are characterized by high energy efficiency. Baking of bakery products is carried out by moving inside of the oven of steel mesh, granite slabs or hinges.
Technological lines are completed as mono-lines (it is possible to bake one type of product) or as complex lines (on the same line it is possible to bake various bakery products).
