DESCRIPTION OF THE SHAPED BREAD LINE EQUIPMENT
The shaped bread segment offers automatic processing lines for the production of wheat, rye-wheat and rye bread. Performance can reach up to 7000 pieces/hour. Baked bread has high quality, a uniform porosity, color and excellent taste.
Bread baking lines are divided on lines with linear baking molds with lids and linear baking molds without lids. Accordingly, automation is selected for removing the covers and unloading bread form the forms.
Main stages of the technological process are: preparation of dough (kneading), separation and forming of dough pieces, fermentation, baking, cooling of finished products, cutting and packaging of products, storage of molds and covers and pasteurization of products (increases the shelf life of products).
